Seitan

Seitan is a vegan meat-replacement that uses gluten flour and nutritional yeast as a base. Wrapped tightly in foil and baked, or simmered in stock, it takes on a texture and flavor equivalent to meat. If you’d rather not make your own, it’s available pre-made and canned in Asian grocery stores.

Seitan Makes enough for about 8 servings

Ingredients 1½ cups (225g) gluten flour/vital wheat gluten ¼ cup (30g) nutritional yeast 1 tsp salt 2 tsp paprika ½ tsp cinnamon ½ tsp cumin 2 tsp ground pepper ¼ tsp cayenne pepper ¼ tsp allspice ¾ cup (180ml) water 4 tbsp tomato paste 1 tbsp tomato ketchup 2 tbsp olive oil 2 tbsp soy sauce 2 cloves garlic

Method 1) Preheat the oven to 325°F/160°C 2) Mix the dry ingredients together in a large bowl and make a well in the center. 3) In another bowl, whisk together the liquid ingredients. 4) Add the liquid ingredients to the well, and combine into dough. Turn out onto a work surface and knead for five minutes 5) Shape into a 6 inch (15cm) cylinder and wrap tightly in foil, twisting the ends. Bake for 90 minutes. 6) Unwrap and leave to cool on a wire rack 7) Cut slices to use as required. The seitan can be refrigerated for about a week.
